This vegs pickles also known as Achar is a must whenever we have briyani. Achar is a traditional Indian condiment and is made from both veg and fruit.
Ingredients
1 large cucumber cut into lengths
1 medium carrot cut in lengths
1 tsp salt
2 tbsp oil
4 thin slices ginger
1/2 tsp mustard seeds
1/2 tsp tumeric powder
1/4 tsp chilli powder
2 tbsp rice vinegar
1/2 tbsp sugar
1/2 tbsp salt
Method
- Rub the salt on the cucumber and leave for 15mins,then squeeze gently to remove excess water.
- Heat the oil in a frying pan and gently stir fry the ginger and mustard seeds until they pop.
- Add the tumeric and chilli powder,then add the cucumber,vinegar,sugar and salt and stir quickly for 3 mins.Do not overcook.
- Cool,then bottle in sterilized airtight jars.Refrigerate,leaving for at least 24 hours before serving.It will taste even better…voila!
