Lately one of my family members were down with flu and craving for something sourish to appease the tastless tastebuds.
So for a quick meal this easy recipe for a sweet and sour chicken turns out delicious.
Ingredients
- 455g Chicken breasts cut into 1 inch cubes.
- 1 green pepper(I used red pepper)
- 4 slices pineapple(preferably but optional )
- 1 small to medium onion
- 1/4 cup corn starch
- 3 tbsp vinegar
- 4 tbsp sugar
- 4 tbsp ketchup
- 1/2 tsp sesame oil
- 2 tsp corn starch
- 4 tbsp water
Method
- Coat the chicken breasts with cornstarch ready to fry in oil.
- Fry in hot oil for about 30 secs to 1 min.Do not overcook the chicken.
- Remove the chicken and put aside.
- Cut the green pepper,onion and pineapple into similar sizes as the chicken breasts.
- Heat oil in pan and fry the onion, green pepper and then add the pineapple.
- Fry for 1 minute then add the vinegar,sugar,ketchup and sesame oil.
- Stir for about 1 minute and then add the chicken breasts.
- Stir the chicken breasts and the rest for about 2 minutes till the chicken breasts is all cooked through.
- Mix 2 tsp corn starch with 4 tbsp water to form a slurry and gradually add into the chicken and stir till the sauce thicken. It is now ready to serve with steam rice.Voila!
