This is Mapo Tofu, a spicy szechuan dish and main ingredients consist of ground pork,bean curd,spicy bean sauce and black bean sauce. I had this as a one dish serves with steam rice…yum. Voila!
Ingredients
- 1 tbsp sesame oil
- 100g ground pork
- 1 tbsp chopped garlic
- 1 tbsp chopped ginger
- 1/2 tbsp chilli bean sauce
- 1 tbsp sweet bean sauce
- 1 tbsp sake
- 1/2 tsp chicken powder
- 150 ml hot water
- 1 tbsp soy sauce
- 1 tbsp sake
- 1 block firm tofu(350g) cubed
- 30g garlic chives
- 2 tsp potato starch
- 1 1/2 tbsp water
- szechuan pepper(optional)
- steam rice
Method
- Heat up the sesame oil.
- Stir fry the ground pork on high heat breaking the meat into smaller pieces.
- When the pork turns clear and cooked through, add the garlic and ginger.
- Bring the heat to medium and stir fry till aromatic.
- Push the mixture to one side of the pan and add in the chilli bean sauce and sweet bean sauce. Stir fry at low heat.
- Mix the pork mixture and the sauces together and stir fry until they are evenly brown.Add in the sake and stir fry for a few seconds.
- Add in the chicken stock,soy sauce and sake mix and stir lightly.
- Add in the tofu and gently spread them in the pan and bring the sauce to high heat.
- When it boils,reduce heat to medium low and simmer for 2 to 3 min.
- Add the garlic chives and gently stir with a wooden spatula.
- To thicken the sauce, add the potato starch and water mixture into the pan and gently stir the contents till it is thicken.
It is now ready to serve with steam rice.Voila!
