We were amazed when we saw this Ostrich egg in the fridge of a grocery shop during our travels down south Western Australia.
The storekeeper was friendly and kind enough to teach us how to cook this delicacy, especially how to break and get the yolks out without damaging the whole shell.
We had to use a sharp kinda knife to slowly break the top end of the egg till a small hole was created and then using a chopstick to break and shake the interior egg york. Then we gently pour out the liquid(yolks) onto a bowl with the help of the chopstick forcing out the yolks as you can see the picture of a bowl containing all the Ostrich’s yolks. Amazing to know that an Ostrich egg can contain about 16(approx) that of chicken eggs. We made omelettes with fresh chives,chilli and prawns.
It was delicious and tasted just like chicken eggs.
Divide into 2 omelettes
Ingredients for 1 omelette
- 100g shelled prawns
- 4 tbsp chopped chives
- 2 tbsp shredded red chilli(more if you like spicy)
- 6 tbsp oil
- 2 tsp salt
- 2 tbsp light soy sauce
- Dash of pepper and chicken stock granules.
Method
- Combine all ingredients,seasoning in a mixing bowl and mix well.
- Heat up oil, pour in mixture and pan fry at low heat until set.
- Turn it over and continue to fry until golden brown. Dish up and serve.Voila!
