I am a big fan of Buddy Valastro, the famous baker from the TV programme Cake Boss.
Not only he is a magnificent baker, he is also a wonderful cook from the TV programme Kitchen Boss. This delicious pasta is one of his family authentic home cooked food from his grand parents days. I like to share this with you.
Ingredients
- 1 packet linguine(500g serves 4)
- 1/4 virgin oil
- 6 plump cloves garlic,chopped
- 1 medium large Spanish onion(I use white onion) chopped
- Salt and pepper
- 1.3kg mussels with shells scrubbed clean and debearded. (I use mussels shelled).
- 2 cups sweet sparkling wine or champagne, like Asti Spumante ( I use sweet white wine )
- 1/2 cup chopped Italian parsley.
Method
- Cook linguine in a large pot of salted, boiling water until al dente, according to the instructions on the packet. Drain and set aside.
- Set a large, deep skillet over medium-high. Heat the olive oil. When oil simmers, add garlic, onion, 1 teaspoon of salt and a generous pinch of pepper.
- Reduce heat to medium low and cook stirring until onion is soft and translucent. Add the mussels and stir. Pour in the sparkling wine and stir. Cover the skillet and cook until the mussels open, shaking every half- minute or so, 5 to 7 in total.
- Taste broth and correct salt and pepper.
- Mix pasta into the mussels mixture, garnish with the chopped parsley and ready to serve. Voila!

Is it possible to substitute white wine with vinegar apple cider?
Hi Valencia, personally I don’t think it s good as apple cider vinegar will cut the taste of the entire dish.I like it this way with wine.
