This is a quick cake to bake. Easy preparation using a steamer and some fresh ingredients. It is a simple Chinese traditional cake way back to my mother’s time.
Ingredients
- 4 eggs
- 150g castor sugar
- 1/2 tsp vanilla essence
- 180g self-raising flour,sifted
- 50ml 7-up ( I use Sprite carbonated drink )
Method
- Whisk eggs until frothy, slowly add sugar and continue to whisk until very thick and creamy, add vanilla and whisk well.
- Fold in sifted flour in 3 batches, add 7-up and mix well.
- Pour into a 18cm(7″) round bamboo steaming tray lined with wet white cloth or greased-proof paper, steam with high heat for 30 minutes until cooked. Voila!
To ensure good results:
The eggs used must be big and very fresh.
Whisk eggs and sugar until very thick and creamy.
Fold in flour and 7-up in one direction with light movement.
