This is one of my all time favorite snacks, Chwee Kueh, a popular Chinese snack made of simply rice and tapioca flour. Often this dessert can be served simply with mixture of salted turnips,garlic and sugar or with sambal condiment. It tasted just like the ones in my hometown, soft refreshing and tasty.
Makes 20 pieces
Ingredients
- 140g rice flour
- 1 tbsp tapioca flour
- 180 ml water
- 330 ml boiling hot water
For Topping
- 2 packets ready chopped chye poh( salted radish )
- 50g dried shrimps(optional)
- 10 mushrooms(optional)( soaked, sliced into fine strips )
- 5 pips garlic( chopped )
- 5 shallots (optional )
A
- 1 tbsp cooking oil
- 1/2 tsp pepper
- 1/2 tsp sugar
- 1/2 tsp salt
B
- 3 tbsp granulated sugar
- 1 tbsp dark soy sauce
- Some water
Utensil needed
20 moulds(bowl shaped)
Method
- Combine rice flour, tapioca flour and water together. Add in seasoning A and pour in the boiling hot water. Stir to become batter, set aside.
- Ladle no. 1 into moulds, place into a steamer for 10-15 minutes. Leave the pudding to cool.
- Fry topping with hot oil for 10 minutes, add in seasoning B. Unmould pudding, spoon some topping on top. Serve. Voila!
