Simple Mock Fish Curry

We bought some vegetarian food which are mock fish and chicken to stock up in the freezer. My family loves vegetarian dishes too. There s a very good vegetarian restaurant in the city we often patronize. You will be surprise mock fish, chicken and veg truly imitate the real ones. And they can be more expensive and taste even better for a change. Vegan anyone? I have some mock fish in the freezer and left over carrots. Hmm..I was thinking of what to cook with it? Yes a simple curry can do.

Ingredients

  • 200g  mock fish, cut into bite sizes
  • 1 tbsp butter
  • 1/2 onion
  • 1 tbsp curry leaves
  • 1 stalk lemongrass crushed
  • 1/2 carrot, cut into few slices
  • 1 tbsp assam puree
  • 200 ml water

Marinate

  • 1 tbsp sesame oil
  • 1 tbsp tomato paste
  • 1 tbsp plain yogurt
  • 1 tbsp vegetable oil

Seasoning

  • 1 tbsp chilli powder
  • 1 tbsp curry powder ( mixed with chilli powder to form a paste )
  • 1 tbsp sugar
  • 1/4 tsp salt

Method

  1. Marinate the fish with sesame oil, tomato paste and yogurt, for about 20 minutes. Pan fry the fish lightly on both sides. Set aside.
  2. Melt butter in wok. Saute onion, lemongrass and curry leaves until fragrant. Add seasoning and fry until aromatic.
  3. Add in assam juice, water, carrots and bring to boil. Add fish and cook for another 10 minutes or cooked through. It is ready to serve…Voila!
