Steamed Fruit Cake

I baked this Fruit Cake using what I have in my pantry. The recipe calls for dried apricot and mixed peel which I don’t have any in stock, instead I used only sultanas, fresh red cherries and mixed fruits. And it turns out just as good. Great with a cuppa!

Ingredients A

  • 250g sultana
  • 25g mixed peel
  • 60g dried apricot
  • 35 red cherries
  • 30g rum
  • 50g orange juice
  • 1 orange zest
  • 1/2 tsp mixed spices

Ingredients B

  • 15og butter
  • 100g brown sugar

Ingredients C

  • 2 eggs
  • 2 tsp molasses( I use maple syrup )

Ingredients D

  • 165g plain flour
  • 1/2 tsp baking powder

Method

  1. Mix Ingredients A and let it soak overnight.
  2. Cream Ingredients B until light and fluffy.
  3. Add in ingredients C in gradation, cream until smooth and light.
  4. Add in Ingredients D, mixed until well-blended.
  5. Add in Ingredients A, mixed until well incorporated.
  6. Pour it into a greased and lined 15cm round mould. Cover the mould with aluminum  foil.
  7. Put it into steamer and steam for 1 1/2 hours. Voila!
