I baked this Fruit Cake using what I have in my pantry. The recipe calls for dried apricot and mixed peel which I don’t have any in stock, instead I used only sultanas, fresh red cherries and mixed fruits. And it turns out just as good. Great with a cuppa!

- 25g mixed peel
- 60g dried apricot
- 35 red cherries

- 50g orange juice
- 1 orange zest
- 1/2 tsp mixed spices
Ingredients B
- 15og butter
- 100g brown sugar
Ingredients C
- 2 eggs
- 2 tsp molasses( I use maple syrup )
Ingredients D
- 165g plain flour
- 1/2 tsp baking powder
Method
- Mix Ingredients A and let it soak overnight.
- Cream Ingredients B until light and fluffy.
- Add in ingredients C in gradation, cream until smooth and light.
- Add in Ingredients D, mixed until well-blended.
- Add in Ingredients A, mixed until well incorporated.
- Pour it into a greased and lined 15cm round mould. Cover the mould with aluminum foil.
- Put it into steamer and steam for 1 1/2 hours. Voila!
