Linguine, Mussels with Tomato is my household’s classic favorite pasta.
Anytime is good time to have something Italian.
Serves 4
Ingredients
- 500g Linguine or Spaghetti( cook pasta according to instruction in the pkt in a boiling salted water )
- 700g Mussels or any other seafood mix
- 1 onion, finely chopped
- 2 cloves garlic, chopped
- 400g tomatoes, crushed (can)
- 1/2 cup white wine (optional)
- 2 tbsp olive oil
- 2 tbsp chopped parsley
Method
- Heat olive oil in a pan. Add in garlic and onion cook for 3 minutes on medium heat.
- Add in tomato and white wine, then let it simmer for 10-15 minutes.
- Stir in the mussels and let it cook for 5-8 minutes till it is cooked.
- Stir in the cooked pasta and toss gently for 2 minutes. Add in parsley,mix well till they are well incorporated. Serve. Voila!
