This winter we seemed to be craving for more soup dish. Hmm.. and as far as I can remember, we had soup almost every other day. It’s good to drink more fluid as during winter we don’t feel thirst and often because of that we neglect drinking water and hence we fall sick easily.
This soup is a quick soup and I used what I could find in my fridge and all I did was prepared a pot of water about 1 L and let it comes to a boil.
I added 3 tsp of chicken powder or you can use anchovies powder(see instructions on the pack) and threw in some chopped spring onions and let it simmer and bring down the heat while I prepared the tofu cutting in cubes,slicing the Shiitake mushroom and some Cloud Ears. Then I put all these ingredients into the chicken stock and let it comes to a boil again.
I added 1 tbsp of rice vinegar(optional), 1/2 tbsp of Soy Sauce and a dash of pepper and stirred into the pot of soup. Garnish with spring onions. Voila!
