This is Chives Flower Omelette. The dish may be simple but it is adequate as a meal served with rice or porridge.
First I bought a bunch of chives flower, washed, drained and cut into 2 inch lengths. I cracked 3 eggs into a mixing bowl, added 1 tbsp soy sauce, 1 tsp chicken powder, a drop of oil and a dash of pepper whisk the mixture by stirring gently. Leave aside.
Heat a pan with 2 tbsp vegetable oil. Throw in the chives, sprinkle a dash of salt and gently stir fry them till cooked.
Pour in the egg mixture over the chives and carefully spread the contents setting it like a round pancake. Turn over when it is set. Once it is golden brown on both sides, it is ready.Voila!
