Delectable Corn Pudding

How can a simple pudding like this be able to capture one’s heart? Yes it just did. A simple and delicious kind of dessert. Enjoy la!

Ingredients

  • 200g  sweet canned corns, ( chopped, using a food processor )
  • 150g sugar
  • 475ml coconut milk
  • 65g rice flour
  • 100g tapioca flour
  • 30g custard powder
  • a dash of salt
  • 125ml water

Method

  1. Dissolve sugar  in coconut milk and add in salt and water.
  2. Mix rice flour, tapioca flour and custard powder together. Add in the sugar and coconut milk mixture and stir well.
  3. Add in the sweet corns.
  4. Cook the mixture over low heat till thick consistency. Turn off the heat immediately when the paste turns thick.
  5. Pour in a steaming tray and make sure the surface is pressed evenly. Steam for 25 minutes. Slice when cool. Voila!
