One of my family members is a Japanese food craze since young. Looks like I would be wandering inside the Japanese kitchen for a while. I dished up this Japanese Tonkatsu Don. Simple and easy ingredients.
Ingredients( Serves 4 )
Batter
- 4 pieces pork loin( 115gm each )
- salt and pepper
- plain flour,
- 2 eggs beaten(lightly)
- 50g panko ( breadcrumbs )
- Oil for frying
Sauce (1 serve )
- 100g water
- 1/4 dashi( chicken powder if you wish )
- 1 tbsp soya sauce ( Kikoman )
- 1 tbsp mirin
- 1 tsp sugar
- 60g onion, sliced
- 1 egg( bean lightly )
Method( Batter )
- Snip any fat on the pork steaks to ensure the meat do not shrink when cooked. Beat the steaks with a meat pallet.
- Season with a pinch of salt and pepper on both sides of the meat. Dust with flour and dip into the beaten egg and coat with the panko (breadcrumbs).
- Heat a pot with oil enough to cover the steaks, 2 at a time . Deep fry on both sides for 3 minutes on each side till golden brown at 165-170’C.
- Dish out and drain on a paper towel. Slice the steaks into one inch pieces.
Method for Sauce
- Put all the ingredients for sauce except the egg on the pan(small pan 20cm diameter) and simmer to about 3 minutes, place the pork on top of the sauce with onion, pour some beaten egg and simmer a couple of seconds till the egg looks set, turn off the heat.
- Serve rice on a bowl and slip in the meat and egg sauce mixture slowly on top of the rice. Garnish with mitsuba leaves or coriander leaves if you wish. Serve. Voila!
