I have been having sore shoulder and lately hay fever ‘bug’ for a couple of weeks now. I was feeling really down. However, cooking always cheer me up as I love to cook good food for my family. It is Sunday and I usually come up with some special dish like today I wandered into the Japanese kitchen. This recipe is quite simple. Enjoy la!
Ingredients For Curry
- 1 large onion, chopped to pieces
- 1 large carrots, cut to bite sizes
- 1 medium zucchini, cut to bite sizes
- 2 large potato, cut to quarters
- 1 red capiscum, cut to bite sizes
- 2 tbsp curry powder
- 2( 30g ) curry blocks( Japanese curry blocks )
- 3 tbsp olive oil
- 2 tbsp grated garlic
- 2 tbsp grated ginger
- 600ml water
Method
- Heat pan with olive oil. Add in onion and saute till soft then add in all the vegetables except the potatoes and continue to stir fry for 3 minutes. Add in the grated garlic and ginger.
- Add in the curry powder and stir to coate and combine all the contents. Then pour in the water bring to a boil.
- Add in the potatoes and curry block, bring to a boil for 15 minutes and simmer to lower heat until potatoes is cooked and soft.
For the Pork(Tonkatsu)
- 4 pieces of Pork Loin ( 115gm each )
- 2 egg ( beaten and mix with 2 tsp water )
- Panko ( breadcrumbs ) 1 packet
- plain flour, for coating
- Oil for frying
- some salt and black pepper
Method
- Snip any fat on the pork steaks to ensure the meat remains flat when frying.
- Beat the meat with a meat pallet to tenderize it.
- Season with salt and pepper and dust lightly with flour.
- Dip the steaks into the egg first and then coat them with the breadcrumbs.
- Heat the oil for frying to 170’C. Deep fry 2 steaks at a time for about 6 minutes, turning them until they are crisp and golden. Skim any floating breadcrumbs from the oil occasionally to prevent them from burning.
- Drain the steaks on a paper towel. Cut the steaks into one inch pieces.
Serving the Tonkatsu Curry
Place steam rice on the side of a plate( see pic ). Line up the tonkatsu on the rice and serve the curry on it. Voila!
