Classic Aglio e Olio Prawns Spaghetti

Hmm…Someone’s cooking in the kitchen. Not only looked delicious, it tasted spot on and mouthwatering. It was her favorite pasta, spaghetti Aglio e Olio. It is the Roman dialectal way of saying garlic and oil and generally prepared very spicy. A recipe so delightful and easily satisfies one’s palate. Enjoy la!

Ingredients( Serves 4)

  • 500g spaghetti or any pasta you prefer
  • 1/2 cup virgin oil
  • 1/2 cup fresh prawns,
  • 2 – 3 red chilli peppers(optional if you don’t spicy)
  • 2 tbsp garlic, sliced
  • 1/4 tsp salt

Method

  1. Cook the pasta in a pot of rapidly boiling salted water until al dente. Drain, reserving 1/4 cup of the liquid and return to the pan to keep warm.
  2. Heat olive oil in a pan over medium heat. Add garlic and saute till lightly brown. Add in the prawn, salt and stir the contents till the prawns turned pink or cooked.
  3. Pour the cooked pasta into a bowl for tossing and serving. Add the garlic and prawn mixture and toss. Add in the reserved liquid and give a good stir. Serve immediately. Voila!
