One of my favorite cuisine always has to be anything lamb. Today I bought some lamb cutlets deciding to cook some western dish. This is my quick and simple style of cooking lamb cutlets served with veggies and potatoes.
Ingredients
- 3 pcs lamb cutlets
- 2 potato, quartered, poached, set aside
- green beans, a handful, poached, set aside
- some carrots julienne
- some shredded cabbage
- 1 tbsp butter
Marinate
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp minced garlic
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tbsp olive oil
Method
- Preheat oven to 200’C
- In a bowl combine all the ingredients for marinade and lamb cutlets. Cover with a cling wrap and leave in the fridge for 30 minutes.
- Put the lamb cutlet in a baking tray and grill for 8 minutes on each side or until slightly golden. If you prefer, well done.
- Heat up pan with butter. Put in the potato and saute till coated with butter and crisp. Remove, place on the serving plate. Add in the green beans and saute till they are well coated with the butter. Remove, place on the serving plate.
- Topped the serving plate of potato and beans with the cutlets and drizzle the juices left on the tray over the lamb cutlets. Garnish with cabbage and carrots on the side. Serve immediately. Voila!
