Thai Trio Pork Patties

Briefly, Thai food  is easily distinguished because of the ingredients it uses. The presence of fish sauce, fresh coriander, fresh mint, exotic fruits, red, green chillies paste, spices, etc. easily claimed its identity. Many would say it is a nation full of exotic and authentic flavors simply packed with mouthwatering recipe ideas.

Ingredients( Serves 4 )

  • 500g pork minced
  • 1 cup breadcrumbs
  • 1 egg

Marinade

  • 1/2 stalk lemon grass( lower end of stalk, crush and chop to small pieces )
  • 20g fresh coriander( include the root )
  • 1 tbsp chopped ginger
  • 2 cloves garlic, peeled
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 tbsp lime juice
  • 1/2 tsp white pepper

Method

  1. Place marinade in a bowl with pork minced, breadcrumbs and egg. Mix well.
  2. Cover and refrigerate for 30 minutes or until firm. Divide pork mixture into eight portions then shape into patties.
  3. Heat a lightly oiled grill plate over a medium heat. Add patties and cook for 5 minutes on each side, or until cooked through.
  4. Serve with sweet chilli dipping sauce and garnish with fresh coriander or your preferred veggie. Voila!
