Thai All Veggies Salad

Think healthy and refreshing for a moment! ‘Cleansing time’….how about some Thai salad. A very easy and simple recipe.

Ingredients (serves 4)

  • 65g vermicelli noodles
  • 1 cucumber, thinly sliced
  • 1 carrot, thinly sliced
  • 1 red capsicum, thinly sliced
  • 2 green spring onion, thinly sliced
  • 1/2 cup fresh coriander leaves
  • 1/4 cup fresh mint leaves
  • 1/3 cup whole roasted peanuts

Thai Dressing

  • 2 cloves garlic, grated
  • 1 tbsp ginger, grated
  • 3-4 tbsp fish sauce
  • 4 tbsp vinegar
  • 2 tbsp sugar
  • 1 tbsp lime juice
  • 2 tbsp peanut oil

Method

  1. Cook vermicelli according to instructions on the packet. Rinse and drain well.
  2. Place noodle and all vegetables in a large bowl.
  3. Combine the Thai dressing and whisk well. Then pour over the vegetables and give a good toss until well combined. Sprinkle with nuts. Serve as a side dish or with any meat or fish. Voila!
