Japanese Sweet Sour Fish

I love  this quick and simple battered fish recipe. I bought this baby snapper from the supermarket just the other day and thought I cruised into the Japanese kitchen.

I used some Japanese ingredients and accompanied with a bowl of sweet sour sauce. Enjoy la!

Ingredients (serves 4)

Batter

  • 3/4 cup flour
  • 2 tbsp katakuriko(potato starch) or corn starch
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup water

Method

  1. Sift dry ingredients and add water, mix well.
  2. Dip in the fish and coat well, covering the fish with batter.
  3. Deep fry in hot oil till nice golden brown. Drain on paper towel. Put on a serving plate.

Sauce

  • 1/2 medium white onion, sliced
  • 5 tbsp tomato ketchup
  • 2 tbsp chilli sauce
  • 1 tbsp Japanese rice vinegar
  • 3 tbsp of sugar
  • 1 tbsp soy sauce( kikoman )
  • 50ml water

Method

  1. Mix ingredients for the sauce except onion.
  2. Saute the onion till soft, add in the sauce mixture on low heat and simmer for a minute or two.
  3. Pour into a sauce bowl and put on the serving plate of fish, garnish. Voila!
