Salmon with Thai ingredients..awesome! Again a straightforward recipe simply preparing the authentic Thai sauce and pouring it over the pan fried delicate salmon. And there you have it!
Ingredients
- 1 piece Salmon, 200g
- 3 tbsp vegetable oil
- 1/2 cup chicken stock( chicken powder )
- 1 red chilli, sliced
- 1 green chilli, sliced into 3 parts
- 2 cloves garlic, sliced
- 1/2 onion, sliced
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1/2 cup chopped fresh coriander
Method
- Heat a pan with 1 tbsp oil over medium high heat. Lower the salmon slowly into the pan and fry for 3 minutes on each side or until slightly flaky or cooked through. Remove the fish and place on a serving plate.
- Meanwhile prepare the sauce for the fish. Add remaining oil in a separate pan and add in the onion, garlic and all the chopped chillies. Stir fry for 3-4 minutes till the garlic turned lightly brown.
- Add in the fish sauce, soy sauce and chicken stock, stir together well. Cook for 1-2 minutes. Pour the mixture over the fish and garnish with the fresh coriander. Serve with steam rice. Voila!
