Humble Salmon On Thai

Salmon with Thai ingredients..awesome! Again a straightforward recipe simply preparing the authentic Thai sauce and pouring it over the pan fried delicate salmon. And there you have it!

Ingredients

  • 1 piece Salmon, 200g
  • 3 tbsp vegetable oil
  • 1/2 cup chicken stock( chicken powder )
  • 1 red chilli, sliced
  • 1 green chilli, sliced into 3 parts
  • 2 cloves garlic, sliced
  • 1/2 onion, sliced
  • 1  tbsp fish sauce
  • 1 tbsp soy sauce
  • 1/2 cup chopped fresh coriander

Method

  1. Heat a pan with 1 tbsp oil over medium high heat. Lower the salmon slowly into the pan and fry for 3 minutes on each side or until slightly flaky or cooked through. Remove the fish and place on a serving plate.
  2. Meanwhile prepare the sauce for the fish. Add remaining oil in a separate pan and add in the onion, garlic and all the chopped chillies. Stir fry for 3-4 minutes till the garlic turned lightly brown.
  3. Add in the fish sauce, soy sauce and chicken stock, stir together well. Cook for 1-2 minutes. Pour the mixture over the fish and garnish with the fresh coriander. Serve with steam rice. Voila!
