Snapper Fish In Assam Curry

I love any fish curry.I love making dishes with fish heads. Salmon heads are my household favorite anytime. Often we have soups, curries and braised fish heads with thick sauces.

I cooked some snapper fillets today.It was a bit of work preparing this dish but anything curry I would do most willingly and with enthusiasm.

Ingredients

  • 800g Snapper fillets ( cut into slices 1/2 inch thickness )
  • 3 tbsp oil
  • 10 pieces curry leaf
  • 3 tbsp curry powder
  • 1 tbsp chilli powder
  • 1 tbsp chilli powder
  • 2 red chillies, seeded and cut into pieces
  • 2 green chillies, seeded and cut into pieces
  • some lady’s fingers ( your preference )
  • 100 ml assam juice ( I used ready made from bottle )

Spices( pounded )

  • 3 onions, skinned
  • 4 pips garlic, skinned
  • 3 chilli padi
  • 100ml  coconut milk
  • 300ml water
  • 1 tsp salt

Method

  1. Heat up oil, stir fry curry leaves and pounded spices until fragrant.
  2. Add in the remaining ingredients except fish and stir fry until aromatic.
  3. Add in coconut milk, water and bring to boil. Add in fish and bring to boil, fish is cooked through. Add salt and taste.
  4. Dish up and serve. Voila!
