I love any fish curry.I love making dishes with fish heads. Salmon heads are my household favorite anytime. Often we have soups, curries and braised fish heads with thick sauces.
I cooked some snapper fillets today.It was a bit of work preparing this dish but anything curry I would do most willingly and with enthusiasm.
Ingredients
- 800g Snapper fillets ( cut into slices 1/2 inch thickness )
- 3 tbsp oil
- 10 pieces curry leaf
- 3 tbsp curry powder
- 1 tbsp chilli powder
- 1 tbsp chilli powder
- 2 red chillies, seeded and cut into pieces
- 2 green chillies, seeded and cut into pieces
- some lady’s fingers ( your preference )
- 100 ml assam juice ( I used ready made from bottle )
Spices( pounded )
- 3 onions, skinned
- 4 pips garlic, skinned
- 3 chilli padi
- 100ml coconut milk
- 300ml water
- 1 tsp salt
Method
- Heat up oil, stir fry curry leaves and pounded spices until fragrant.
- Add in the remaining ingredients except fish and stir fry until aromatic.
- Add in coconut milk, water and bring to boil. Add in fish and bring to boil, fish is cooked through. Add salt and taste.
- Dish up and serve. Voila!
