Today I cooked Hainanese Chicken rice for my family. Hainanese chicken rice is our all time favorite delicacy without doubt. It needs no introduction and you can have quite a few variations to prepare this recipe. Take it easy, be happy, relax and cook the way you want it to call your style of Chicken rice!
Serves 4
Ingredients (Chicken)
- 1 cucmber, 1 tomato, some coriander, some spring onion, 1.8 kg chicken
- some chicken oil, some sesame oil
Seasonings A
- 4 tbsp light soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
Rice Ingredients
- 500g fragrant rice
- 4 cloves garlic with skin
- 3 tbsp chicken oil
- 1 small piece old ginger
- 4 pieces pandan leaves
- 600ml chicken stock
Seasonings B
- 1/2 tbsp salt
- 1/2 tsp chicken seasoning powder
Chilli Sauce Ingredients
- 6 red chillies, 1 small piece young ginger, 2 cloves garlic, 6 chilli padis, 2 tbsp lime juice, 1/4 tsp salt, 1 tsp sugar, 1 tbsp chicken oil, 50ml chicken stock
Method to cook Chicken
- Cut cucumber and tomato into pieces. Cut coriander and spring onion into sections.
- In a deep pot, add water and bring it to a boil. Put chicken in( water level must be above to immerse chicken fully) and cook over low heat for 25-30 minutes.
- Remove the chicken. Retain chicken stock for later use. Next soak chicken in cold water. Once cooled down, hang chicken up and coat with some chicken oil and sesame oil.
- On a plate, decorate with cucumber slices and tomatoes at the sides. Chop chicken into pieces to serve on the plate. Drizzle blended seasonings A and garnish with coriander and spring onion. Serve. Voila!
Method to cook Rice
- Rinse rice and drain. Flatten garlic with a knife.
- Heat up chicken oil and fry garlic, ginger and pandan leaves. Then add rice and stir fry till fragrant.
- Pour rice into electric rice cooker. Add chicken stock and Seasonings B. Cook rice well. Serve. Voila!
Method to make Chilli Sauce
- Grind chillies, ginger, garlic amd chilli padis. Add in remaining Chilli Sauce ingredients and mix well.
