Fried Rice W’ Lamb Cutlets

I gave myself a dinner treat  today cooking  french cutlets accompaniments fried rice and some fresh shredded cabbage and red capsicum with mint sauce.

Ingredients( Fried rice, 2 serves )

  • 2 strips bacon
  • 2 sausages
  • 2 tbsp diced onion
  • 1/2 cup peas
  • 1/2 cup bean sprouts
  • 1/2 cup julienne carrots
  • 2 eggs
  • 2 bowls steamed rice(refrigerated overnight if possible)

Seasoning

  • 1  tbsp light sauce
  • salt and pepper to taste
  • a drop of sesame oil

Veggies

  • Shred some cabbages and capiscum according to your requirement. Add in on next to the fried rice.

Method

  1. Diced bacon and sausages finely. Whisk eggs and stir in a little salt.
  2. Heat a little oil in wok. Stir fry the egg until done. Set aside.
  3. Heat oil in a wok. Add onion and peas and stir fry them till done. Put in sausages and bacon. Stir fry quickly until fragrant.
  4. Add steamed rice and mix well. Put in the seasonings and stir fry until they are well incorporated. Lastly add the stir fried egg and mix well. Place a bowl of fried rice in a serving dish.

Lamb cutlets( 4 pieces )

  1. Set oven to grill at 200’C. Sprinkle salt, pepper and mixed herbs on the cutlets.
  2. Put them on a baking dish and bake in the oven for 20 minutes or until cooked.
  3. Place the cutlets on the fried rice. Garnish with spring onions and drizzle some mint sauce on the side. Serve. Voila!
