Fruity Loaf

ImageBake this fruity bread. The recipe is great by Sassy Syrah. We love the sweetness soft texture coming from the mixed dried fruits and aroma produced from the mixed spice when the bread is almost ready. My son bought this bread maker though I still prefer the old school way..

Ingredients (serves 4)

  • 270ml water
  • 6 tsp butter or 6 teaspoon oil
  • 1 1/2 tsp salt
  • 6 tsp brown sugar
  • 450g white bread flour( 3 cups )
  • 6 tsp powdered milk
  • 3 tsp ground mixed spice
  • 2 tsp yeast
  • 1/2 cup mixed dried fruit(sultanas and raisins). You can use commercial mixed fruits or currants)

Gelatine glaze(optional)

  • 3 tbp water
  • 6 tsp sugar
  • 3 tsp gelatin

Method

  1. Put all of the ingredients except the fruit in the order recommended by your manufacturer
  2. If you have a nuts dispenser place the fruit in there
  3. Otherwise add the fruit when the 2nd knead has 8 minutes to go. When the bread is ready remove and leave it to cool. Sliced. Toasted or buttered, there you have it. Voila!

If using the glaze, combine glaze ingredients in a small saucepan over a heat until the sugar and gelatine has dissolved.

Use the pause function if you have one, at 15 minutes into the baking cycle, brush glaze over the loaf. (This is optional).
