Crispy Fried Chicken

I chanced upon this recipe by Martin Yan and thought it s quite interesting that he uses red fermented beancurd in this recipe. It is so yummy! Please try.

Ingredients

  • 450gm chicken breast or thigh( I prefer breast ) cut to bite size
  • 1 cup cornstarch
  • 1 egg (beaten)
  • oil for deep frying

Marinade

  • 2 cubes (30gm) red fermented beancurd
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/2 tsp sesame oil
  • 3 dashes white pepper powder

Method

  1. Mash the fermented beancurd in a bowl, add sugar,salt and white pepper powder and stir well.
  2. Add in the chicken pieces and leave it to marinate in the fridge for 1 to 4 hours.
  3. Heat up oil for deep frying. Dip the chicken pieces into the beaten egg and coat with constarch evenly.
  4. Deep fry the chicken until they turn golden brown. Remove and drain on paper towel.
  5. Serve with your favorite sauce. Voila!
