Homemade Crab Porridge

Homemade crab porridge is one of the delicacies my family misses dearly. One of my mom’s specialities is this crab porridge. I remember whenever mom cooks this dish, she would surely invite her special guest which is her own personal doctor whom she became friends with and one who is so humble as to drop by for a bowl of crab porridge. I decided to have crab porridge when the thoughts of my mom’s ‘special guest’ incident popped into my mind. Sometimes it s just an instinct when food can bring back a memory.

Ingredients (serves 4)

  • 4 medium size crabs(we bought fresh from seafood store, wash and halves)
  • 1 cup rice, washed, then soaked in water for one hour

Sauce(pound)

  • 3 tbsp tau cheong(fermented beans)
  • 2 fresh red chillies, seeded
  • 4 shallots
  • 3 cloves garlic

Seasoning

  • 3 tbsp garlic oil
  • 1 cube chicken stock( chicken stock )
  • 1/2 tsp salt to taste
  • pepper to taste
  • Garnishing
  • Fried shallot crisps
  • chopped spring onions and chinese parsley

Method

  1. Cook rice with 4 cups water in deep sauce pot until rice is half cooked.
  2. Saute pounded ingredients and add the crab pieces and stir fry quickly.Dish out the fried ingredients and  put them in the porridge and continue to cook till rice is fluffy. Add the chicken stock cube and seasoning.
  3. Serve porridge with garnishing. Voila!
