I would say this is a quick pastry similar to choux pastry method. No fuss, simple and tastefully baked with durian filling where durian lovers would gratefully appreciates no doubt. You can use chocolate topping and jam filling in this recipe.
Ingredients
- 50g butter
- 140g water
- 90g flour
- 1/2 tsp baking soda
- 2 eggs
Durian Filling
- 1 tbsp gelatine
- 50g water
- 80g sugar
- 150g durian
- 1/4 tsp yolk coloring
- 1/2 tsp durian essence
- 200g fresh cream
Method(Durian Filling)
Dissolve gelatine, water and sugar under heat, add durian, durian essence and yolk coloring and mix with whipped fresh cream. Cut open a small hole at the side of the puff, big enough to squeeze in the durian filling.
Method
1 Boil butter and water.
2 Add flour and baking soda and remove from heat.
3 Add eggs, pour in blender and mix till buttery.
4 Using a pastry bag, squeeze the mixture onto the baking tray, bake in oven at 160’C for 20 to 25 minutes.
5 Cut puff open, add durian filling into the puffs, sprinkle with icing sugar and it is ready to serve. Voila!
