
These delicious buns topped with chicken floss is an Asian popular pastry bun. I remember the good old days these buns from the bakery or cake shops are so popular and delicious that we often have this as a ‘quick substitute’ for tea or lunch just to replace a hungry stomach. When they comes out straight from the oven, it s mouthwatering.
Ingredients.
A ( mix together and ferment for 5 mins )
- 1 tbsp instant yeast
- 1 tsp castor sugar
- 80ml lukewarm water
B
- 70g butter
- 30g white sugar
- 40g milk powder
- 1/2 tsp salt
C
Mix together 1 1/2 tsps bread softener(look for it in Asian Store), I omit this ingredient
- 380g high protein flour
- Mix together 1 egg
- 90ml lukewarm water
For topping
- Some ready grilled chicken floss
- Some salad cream
For glazing
- 1 egg yolk
Method
1 Mix A,B, and C together.
2 Once it forms a dough, leave it to proof in an oven set in to very low temp for about 20 minutes. Or just slightly warm area enough to help proofing.
3 Divide the dough into 60gm portions. Flatten then round it up. Cover buns with a damp cloth and leave it to proof a second time for 20 mins.
4 Glaze buns and bake in the oven 180’C for 20 mins until light golden brown.
5 Spread salad cream on top of each bun. Sprinkle chicken floss on it. Voila!
