I baked this Chinese style roast chicken marinated with garlic mixture seasonings. This recipe is simple but requires quite a bit of time. Patience is rewarding.
Ingredients (serves 4)
- 1 whole chicken
- 300g garlic, chopped
- 100g ginger, chopped
Seasoning
- 50g sugar
- 100g salt
- 50g chicken powder
- 1 tsp szechuan peppercorns
Method
1 Mix the garlic, ginger, sugar, salt, szechuan pepper and chicken powder evenly.
2 Wash the chicken clean and heat the chicken skin with boiling water so it becomes contracted. Remove and Pat dry.
3 Spread 1/3 of the ingredients and seasoning on the external of the chicken.
2/3 of them inside the cavity. Marinate for at least 2 hours and hang it dry.
4 Preheat to 200’C. Bake the chicken for 30 minutes and lower the temperature to 170’C Bake for another 15 minutes, flip the chicken over and bake for another 15 minutes till the chicken turns golden brown. Voila!
