I always wanted to try cooking stuffed vegetables like mushroom,capsicum,tomato, egg plant etc with savory fillings as they really look pretty, colorful and captivating.They seem simple to prepare. For the first time, I am trying on some chinese ingredients for marinade.
Ingredients (serves 4)
- 4 large field mushrooms(remove stems,chopped finely)
- 250g minced chicken
- 1 tsp caltrop starch ( chestnut powder )
- 1/4 cup finely chopped coriander
- 1 tbsp oyster sauce
- 1 tsp sugar
- a pinch of salt and dash of pepper
- a dash of sesame oil
- 1/2 cup chopped tomato
Method
1 Preheat oven to 200’C. Wipe the mushrooms with a paper towel. Remove stalk and chop finely.
2 Mix the rest of the ingredients including the chopped stems and leave to marinate except chopped tomatoes about 20 minutes.
3 Spoon the mixture into the mushroom caps and sprinkle some chopped tomatoes on top . Place on a baking tray and bake for 15-20 minutes. It is ready when the meat is cooked thru’. Voila!
