Often I have my fish baked with simple marinades together with any vegetables available for just a meal. It is also my nutritious way as the fish and vegs are not overcooked.
Ingredients ( serves 1 )
- 200g basa fillet( I piece or any white fillet )
- some french beans( blanch with carrots a few seconds )
- a few slices(ribbons) carrots
- ribbons of red chilli if you like it hot
Sauce
- 1 tsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 2 tbsp water
- 1 tbsp olive oil
- salt and pepper to taste
Method
1 Place 1 large sheet of baking paper( you can use aluminium foil) on the table. Spread the lime slices on top.
2 Set the fish on top of the lime and season with salt and pepper. Toss carrots and beans with light soy,oyster sauce , sugar and water. Place on top the fish and drizzle with olive oil.
3 Fold edges of the baking paper together sealing the fillet inside. Place on a baking dish and in a preheated oven 200’C for about 15 minutes or until the fish is cooked thru. Remove and serve warmth with a lime wedge on side and steamed rice. Voila!
