Laksa is also considered a delicacy you can find mainly in Singapore and Malaysia. There are many variations cooking this dish.
All I need are some fish balls, cuttlefish cakes and with some yellow noodles to cook up this dish. A few fresh ingredients essentials for a good stock.
Ingredients ( serves 2 )
- 200gm yellow noodles
- 4 pieces cuttlefish cakes
- 5 pieces fish cakes
- some bean sprouts
- some chopped coriander
- some chopped spring onion
Sauces
- 2 tbsp laksa sauce( in a bottle you can buy from the oriental store)
- 200gm coconut milk
- 4 tbsp grinded shrimp
- 1 onion
- 400 gm chicken stock
seasoning
- salt and pepper
Method
- Blanch fish cakes, cuttlefish cakes and bean sprouts.
Blanch yellow noodles( 20 seconds ) put in a bowl. Add in bean sprouts on top of it. - Put all the sauces in a mixer. Add in coconut milk and mix well.Cook the mixed sauces with the chicken stock till it boils, add in all the ingredients except the noodle and bean sprouts.
- Lower the heat and stir continuously for 10 minutes.
- Finally pour the curry sauce, fish and cuttlefish cakes over the thick noodle and garnish with coriander leaves.
- Serve hot. Voila!
