Quick Laksa With Fish cakes

ImageLaksa is also considered a delicacy you can find mainly in Singapore and Malaysia. There are many variations cooking this dish.

All I need are some fish balls, cuttlefish cakes and with some yellow noodles to cook up this dish. A few fresh ingredients essentials for a good stock.

Ingredients ( serves 2 )

  • 200gm yellow noodles
  • 4 pieces cuttlefish cakes
  • 5 pieces fish cakes
  • some bean sprouts
  • some chopped coriander
  • some chopped spring onion

Sauces

  • 2 tbsp laksa sauce( in a bottle you can buy from the oriental store)
  • 200gm coconut milk
  • 4 tbsp grinded shrimp
  • 1 onion
  • 400 gm chicken stock

seasoning

  • salt and pepper

Method

  1. Blanch fish cakes, cuttlefish cakes and bean sprouts.
    Blanch yellow noodles( 20 seconds ) put in a bowl. Add in bean sprouts on top of it.
  2. Put all the sauces in a mixer. Add in coconut milk and mix well.Cook the mixed sauces with the chicken stock till it boils, add in all the ingredients except the noodle and bean sprouts.
  3. Lower the heat and stir continuously for 10 minutes.
  4. Finally pour the curry sauce, fish and cuttlefish cakes over the thick noodle and garnish with coriander leaves.
  5. Serve hot. Voila!
