A bit of imaginatiion is need for this dish. I had fried rice and a piece of fish for lunch easily prepared, no fuss. Just thaw the frozen mixed vegs and pan fried the fish. How simple is that!
Ingredients (serves 1)
- 1 bowl cooked rice(best overnight rice in fridge)
- 1/2 cup mixed frozen vegetables(thawed)
- 1/2 onion chopped
Seasoning
- 1 tsp soy sauce, add to taste
- pinch of salt and pepper
1 piece fish seasoned lightly with Lea Perrins, salt and pepper
- Pan fried fish in a pan with some oil until both sides are cooked through. Remove and drain on paper towel.
Method
- Heat oil in wok. Add the onion and mixed vegetable. Stir fry them until done
- Add in the bowl of cooked rice and mix well together with the vegetables. Add in seasonings and stir fry until they are well incorporated.
- Lastly topped with the fish. Serve hot. Voila!
