Fried Rice with Fish

A bit of imaginatiion is need for this dish. I had fried rice and a piece of fish for lunch easily prepared, no fuss. Just thaw the frozen mixed vegs and pan fried the fish. How simple is that!

Ingredients (serves 1)

  • 1 bowl cooked rice(best overnight rice in fridge)
  • 1/2 cup mixed frozen vegetables(thawed)
  • 1/2 onion chopped

Seasoning

  • 1 tsp soy sauce, add to taste
  • pinch of salt and pepper

1 piece fish seasoned lightly with Lea Perrins, salt and pepper

  • Pan fried fish in a pan with some oil until both sides are cooked through. Remove and drain on paper towel.

Method

  1. Heat oil in wok. Add the onion and mixed vegetable. Stir fry them until done
  2. Add in the bowl of cooked rice and mix well together with the vegetables. Add in seasonings and stir fry until they are well incorporated.
  3. Lastly topped with the fish. Serve hot. Voila!
