Anything with curry is always appetizing. Agree? Unless you don’t like curry or spicy food at all. I have added jackfruit pieces, glass noodle, beancurd sticks along with the usual cabbage and carrots into the curry. Simply add any vegetables you like, whatever suits you.
Ingredients( Serves 4 )
- 200g cabbage
- 150g carrots, sliced
- 1 can of jackfruit pieces
- 120g beancurd sticks(soaked and drained)
- 10g glass noodle
- 4 tbsp curry paste( add more if you prefer spiciness )
- 2 litre water
- 300 ml coconut milk
Seasoning
- 1/2 tbsp salt
- 1 tsp sugar
- 1 tsp chicken powder
Method
- Heat up 3 tbsp oil in hot wok. Shallow fry the curry paste till chilli oil is separated and fragrant. Add in all the vegetables, glass noodle, beancurd sticks and jackfruit and fry gently till all combined.
- Pour in water and bring to boil. Cook for 10 minutes. Add in seasoning and coconut milk, bring back to the boil. Add salt to taste.
- Once vegetables are soften, ready to serve. Voila!
