How easy shallow frying this fish marinated with curry powder mixture. Serves with steam rice or porridge which makes a simple adequate meal.
Ingredients( serves 1 )
- 2 pieces mackeral fish
- 10gm shredded ginger
- 3 shallot shredded ( optional, more aromatic if used )
Marinade
- 1 tsp salt
- 1 tbsp bottled curry powder
- 1 egg, 1 tbsp corn flour
Method
- Rinse fish and pat dry, season with marinade and stand for 15 minutes. Shallow fry fish with some hot oil until cooked and golden brown on both sides. Set aside.
- Deep fry the shredded shallot and ginger in hot oil until crispy and golden brown. Remove, drain of excess oil and spread on top of the fish. Serve hot. Voila!
