Fried Mackeral Fish With Curry Powder

ImageHow easy shallow frying this fish marinated with curry powder mixture. Serves with steam rice or porridge which makes a simple adequate meal.

Ingredients( serves 1 )

  • 2 pieces mackeral fish
  • 10gm  shredded ginger
  • 3 shallot shredded ( optional, more aromatic if used )

Marinade

  • 1 tsp salt
  • 1 tbsp bottled curry powder
  • 1 egg, 1 tbsp corn flour

Method

  1. Rinse fish and pat dry, season with marinade and stand for 15 minutes. Shallow fry fish with some hot oil until cooked and golden brown on both sides. Set aside.
  2. Deep fry the shredded shallot and ginger in hot oil until crispy and golden brown. Remove, drain of excess oil and spread on top of the fish. Serve hot. Voila!
