Herbed Lamb W’ Roast Potatos

ImageAll time favorite roast is the lamb cutlet with roast potatoes and a bed of salads to accompany.

Ingredients( serves 1 )

  • 3 lamb cutlets
  • 2 garlic cloves, minced
  • 1 tbsp fresh chopped mint leaves
  • 1 tbsp fresh chopped oregano
  • 1/4 cup olive oil

2 potatoes quatered, parboil till soft, drizzle with olive, salt and pepper

Method

  1. Preheat oven to 200’C.
  2. Mix olive oil, garlic cloves, chopped mint leaves and oregano in a bowl.
  3. Rub over the lamb cutlets and set aside for 20 minutes.
  4. Roast lamb and potatoes uncovered in a baking tray into the oven for 15 minutes till cooked as desired.
  5. Remove lamb and set aside. Continue roasting the potatoes till brown lightly.
  6. Serve lamb with potatoes and a dish with some basil and cherry tomatoes(or any salad you). Voila!

baked in oven at 180’c till golden brown, set aside.
