All time favorite roast is the lamb cutlet with roast potatoes and a bed of salads to accompany.
Ingredients( serves 1 )
- 3 lamb cutlets
- 2 garlic cloves, minced
- 1 tbsp fresh chopped mint leaves
- 1 tbsp fresh chopped oregano
- 1/4 cup olive oil
2 potatoes quatered, parboil till soft, drizzle with olive, salt and pepper
Method
- Preheat oven to 200’C.
- Mix olive oil, garlic cloves, chopped mint leaves and oregano in a bowl.
- Rub over the lamb cutlets and set aside for 20 minutes.
- Roast lamb and potatoes uncovered in a baking tray into the oven for 15 minutes till cooked as desired.
- Remove lamb and set aside. Continue roasting the potatoes till brown lightly.
- Serve lamb with potatoes and a dish with some basil and cherry tomatoes(or any salad you). Voila!
baked in oven at 180’c till golden brown, set aside.
