It s been a very hot early Summer and having some porridge is good to bring the heat down. Remembering to drink lots of water to keep the body hydrated. I like this recipe very much. It s a bit of work but worthwhile.
Ingredients A(serves 4)
- 1 tsp sesame oil
- 300g rice, washed and drained
- 3 pc bean curd skin, soaked and chopped
- 1/2 pot boiling water
- 200 lean meat, mixed with 1 tsp salt,seasoned for 1/2 hour
Ingredients B(mixed and made into tsp size meat balls)
- 150g minced meat
- 1 tsp corn flour
- 1/8 tsp salt, 1/8 tsp pepper
- 1 tsp diced ginger
- 2 tbsp diced spring onion
Seasoning
- 1 tsp sesame oil
- 1/2 tsp pepper
- 1/2 chicken stock grandules
- salt to taste
Method
- Heat up a pot, fry rice lightly with 1 tsp sesame oil. Put in chopped bean curd skin, add 1/2 pot boiling water and boil for 1/2 an hour.
- Add the whole piece of lean meat, boil until 3/4 cooked. Remove meat and dice into cubes.
- When rice is soft, add meat balls and chopped ginger. Boil until meat balls are cooked.
- Add meat cubes and seasoning, boil until meat cubes are cooked. Salt to taste.
- Dish onto a bowl, garnish with diced spring onion/coriander and serve hot. Voila!
