Sichuan Spicy Tofu(Ma Po Dao Fu)

ImageA healthy dish full of flavor can serve as a one dish meal accompanied with steam rice. Like this, it is already an adequate meal for a hungry stomach. It is originated in Sizchuan in the 19th century.

Ingredients(Serves 4)

  • 3 cakes bean curd(tofu)
  • 1/2 leek
  • 115g minced pork( or any meat you desire )
  • 3 tbsp vegetable oil
  • 1 tbsp black bean sauce
  • 1 tbsp light soy sauce
  • 1 tsp chilli bean sauce
  • 1 tbsp chinese rice wine or dry sherry
  • 3-4 tbsp water
  • 2 tsp corn flour( mix with 2 tbsp water )
  • ground peppercorn to taste
  • drizzle of sesame oil

Method

  1. Cut bean curd tofu into 1cm square cubes. Blanch cubes in a pan of boiling water for 2-3 mins to harden.
  2. Remove and drain. Slice leek into thin strips.
  3. Stir fry the minced pork in oil until the color changes, then add the leek and black bean sauce. Add the bean curd, soy sauce, chilli bean sauce and rice wine. Stir gently for 1 minute.
  4. Add in water, bring to boil and braise for 3-4 minutes.
  5. Thicken the sauce with the cornflour mix, ground peppercorn and drizzle with the sesame oil.
  6. Garnish with spring onions. Serve. Voila!
