Zaru Soba And Crispy skin Tofu

ImageCold Soba is called Zaru Soba. Soba is Japanese noodles made from buckwheat flour. Cold soba(chilled) is served with a dipping sauce or as a noodle soup in a hot broth. I cooked two recipes today. One is the Zaru soba and accompanied by crispy tofu soaked in bonito sauce.

Ingredients(serves 2)

  • 3 blocks tofu( usually 6 in a box )

Stock

  • 2 tbsp soy sauce
  • 1 tbsp bonito flakes
  • 250ml  water
  • 1/2 tbsp oyster sauce
  • 1/3 tbsp white sugar

For coating

  • 1/2 bowl tapioca flour
  • 1/2 bowl tangmin flour

Garnishing

  • Some chopped spring onion
  • Some bonito flakes

Method

  1. Bring stock to a boil and set aside the broth in a shallow bowl.
  2. Dip the tofu pieces in dry flours and deep fry till golden brown.
  3. Remove, place into the broth and garnish. Serve. Voila!

Cold Soba( I used ChaSoba/green tea soba)

200gm( 2 persons )

Cook soba noodles in hot boiling water until soft and done. Rinse in cold water and drain.

Refrigerate for a while and put onto a bowl. Usually served with a dipping sauce. As I am having the crispy tofu which comes with the broth, it is adequate to go along as a dipping sauce. Voila!
