Fish Fillet In Tomato Gingered Soup

ImageImageI was at a fishmonger last weekend  for a fresh red snapper. It was about 30 minutes drive from my home has everything fresh from the ocean any day. I had the fish filleted for a tomato gingered soup. Everyone deserves a bowl of soup for this hot summer. It is a very simple and easy to prepare soup.

Ingredients( serves 4 )

  • 2 tomatoes chopped
  • 2cm thinly sliced ginger
  • 1/2 onion, chopped
  • 1/2 length leek, sliced thinly
  • 2 or 3 slices fresh long chillie( optional )
  • 1 litre chicken stock( made my own )
  • 2 tbsp olive oil
  • some chopped spring onion for garnish

Marinade for fish( Leave to marinate for 20 minutes )

  • 250-300gm red snapper(any white fish fillet) sliced in chunks 1/2 cm thick
  • 1 tsp soy sauce
  • 1 tsp cornflour
  • 1/2 inch grated ginger
  • dash salt and pepper
  • drizzle of white wine/sherry/shaoxing wine

Method

  1. Heat olive oil in a soup pot. Add in onion and ginger, saute gently till onion is soften then add in the chillie, leek and tomatoes.
  2. Stirring the mixture for 2 minutes until the ingredients soften and aromatic. Pour in the stock and bring to boil.
  3. Add in the fish marinade into the soup and bring to boil. A quick squeeze of lemon. Salt to taste. Serve. Voila!
