There are many delightful Chinese snacks and Dim Sum and of course they come with different variations to prepare. I kinda like this one which I have also deconstructed a bit to taste. I guess the secret ingredient is the fried shallots.
Ingredients:
4 tbsp oil of fried shallots oil
3 tbsp shallots fried
1 cup hot water
600g glutinous rice, soaked overnight or till soft
Seasoning A
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tsp salt
- 1 tsp chicken powder
Filling:
- 150g diced chicken meat
- 2 chinese sausage diced/sliced
- 50g dried shrimps, soaked
- 5 mushrooms soaked, sliced
Seasoning B
- 1/3 tsp salt
- 2 tsp light soy sauce
- 1 tsp sugar
- 1 tsp pepper
- 1/2 tsp chicken powder
Method
- Heat 2 tbsp oil and stir fry filling ingredients till fragrant. Add in seasoning B and taste. Keep aside.
- Pour a cup hot water over soaked rice and place into steamer. Steam for 20 minutes until rice is cooked. Add seasoning A,, shallots oil ,fried shallots, mix well and fluff up the rice.
- Finally add in the filling mixture into the rice and combine well. Put the rice mixture back onto the steamer and steam for another 20 minutes. It s ready to serve. Voila! Happy Days!
