The Underrated Fried Rice

Very often they would say the wok has to be real hot, the rice has to be kept in the fridge overnight for a good fried rice.

I agree to disagree a little though. So long the rice is cooled and not sticky hot, it s okay. The ingredients for a aromatic dish and its technique to fry is essential. The recipe can be simple and yet  intense too. Sometimes the eggs are fried into an omelette first and later topped onto the rice. Another, is stir frying the beaten eggs and then mix in the rice mixture.  Well, it’s your palate and what makes your stomach happy?

Ingredients

  • 2 tbp vegetable oil
  • 2 eggs
  • 1/4 cup dried anchovies
  • 1 clove garlic, chopped
  • 1/2 cup peas(frozen)
  • 1 piece chopped lup cheon( bbq sweet pork ) or any leftover cooked meat
  • 2 bowls cooked rice(cooled/overnight leftover)
  • 1 fresh red chillies sliced(optional)

seasoning

  • 1 tsp light soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sesame oil
  • dash of pepper

Method

  1. Heat up 2 tbp oil and fry the anchovies and garlic until fragrant. Add in beaten eggs and stir well until almost cooked and set.
  2. Stir in the peas, lup cheon(pork) or any cooked meat, sliced chillies, rice and  seasonings. Stir fry until well incorporated about 1-2 minutes. Season to taste. Voila! Happy Days!
