This is my favorite sponge cake using high heat in a steamer. I received good response from viewers on this recipe and so I post it again. We have this cake quite often as the recipe is easy to prepare and requires only a few ingredients. It s light, soft and delicious. Good for an afternoon tea.
Ingredients
- 4 eggs
- 150g castor sugar
- 1/2 tsp vanilla essence
- 180g self raising flour, sifted
- 50 ml 7-UP, fizzy drink
Method
- Whisk eggs until frothy, slowly add sugar and continue to whisk until very thick and creamy, add vanilla and whisk well.
- Fold in sifted flour in 3 batches, add 7-UP and mix well.
- Pour into a 18cm round bamboo steaming tray lined with wet white cloth or greased proof paper, steam with high heat for 30 minutes until cooked.
- Alternatively, you can just use a cake tin and the result is the same. Voila! Happy Days!
