Simply amazing to discover that there are many recipes for apple desserts. I would say this is a classic recipe as the ingredients here is all you need to prepare a simple apple dessert cake any day. Recently I have baked some apple streusel cupcakes, a Dutch apple cake and now an apple streusel cake which turns out delicious, soft and fragrant. Good for an afternoon tea and a wow! to treat friends.
Ingredients
- 450g cooking apples( green apples,grannysmith)
- 175g self raising flour
- 1 tsp ground cinnamon
- pinch of salt
- 115g butter(soften), plus extra for greasing
- 2 eggs
- 1-2 tbsp milk
- icing sugar, for dusting
Streusel topping
- 115g self raising flour
- 85g butter
- 85g caster sugar
Method
- Preheat oven to 180’C, then grease a 23cm springform cake tin. To make the streusel topping, sift the flour into a bowl and rub in the butter until the mixture resembles coarse crumbs. Stir in the sugar and reserve.
- To make the cake, peel, core and thinly slice the apples. Sift the flour into a bowl with the cinnamon and salt. Place the butter and sugar in a separate bowl and beat together until light and fluffy. Gradually beat in the eggs, adding a little of the flour mixture with the last addition of egg. Gently fold in half the remaining flour mixture, then fold in the rest with the milk.
- Spoon the mixture into the prepared tin and smooth the top. Cover with the sliced apples and sprinkle the streusel topping evenly over the top.
- Bake in the preheated oven for 1 hour, or until browned and firm to the touch. Leave to cool in the tin before opening the sides. Dust the cake with icing sugar before serving. Voila! Happy Days!
