Simple and easy can be delicious too. These are banana walnut cupcakes with its main ingredients, ripen bananas and toasted walnuts. I love recipes that are simple with few ingredients and yet amazingly deliver delectable yummy results. Like these cupcakes the preparation is pretty much straightforward.
Ingredients( makes 10 pieces )
A
- 135g bananas(fully ripen)
- 80g brown sugar
- 2 eggs, beaten
- 60g soften butter
- 30g fresh milk
B
- 130g self raising flour
- 1/4 tsp bicarbonate of soda
C
- 60g walnuts, extra for topping (toasted, diced)
D
- 1 banana(ripen, sliced)
* 10 pcs cupcake cases
Method
- Mash bananas of ingredient A. Set aside to allow color to darken.
- Combine remaining ingredient(A) and mash bananas. Beat well together to a smooth batter and fold in ingredient B. Then add in walnuts of ingredient C.
- Spoon the mixture into prepared paper cups in a muffin tray 3/4 of the way up. Topped with some walnuts and a slice of ripen banana. Bake in a preheated oven 150’C for 20-25 minutes or when a skewer inserted comes out clean.
- Transfer to a cooling rack. Voila! Happy Days!
