Too good to be true! I could have prepared fresh ingredients for the marinades for this dish but thought I tried store bought satay marinades. It saves preparation time too.
It turns out delicious too and we were all pleased with it.
All I did was prepared some chicken thigh and cut into some bite size pieces and marinate with the satay sauce preferably overnight. Thread the chicken strips onto the satay sticks(skewers) and popped them onto the oven and grill until done. (making sure you soak the satay sticks in some water for at least 30 minutes before use to avoid burning)
For the accompaniment, I cut some cucumber and red onion(sweet ones) into bite sizes.
I omit the rice dumpling(ketupat) which usually accompany any satay dish.
I also bought a can of satay gravy, cut up some bite size pineapples to add to the gravy in a saucepan, gave it a light heat on the stove. And voila, it s ready as a dipping sauce for the satay chicken. Yum! Happy Days!
