

This old fashion peanut pancake is also known as ‘ming chiang kueh’ in asian chinese. I will have this snack often for tea or breakfast and it s easy to make.
The batter is easy and quick to prepare simply flour, sugar, yeast, baking soda and egg. With adequate amount of water added to form a batter.
A ladle of batter is then poured onto a heated pan to make a pancake shape. When bubbles appear on the surface, cover for a few minutes then uncover to fill in the peanut fillings. Put back the lid for another 2 minutes , the pancake is done. Happy Days!
