

I really enjoyed these banana peanut butter muffins. The muffins are aromatic, soft and moist to the texture.
Simply prepare the dry ingredients such as all purpose flour, baking powder, baking soda, cinnamon and salt and mix well.
In a separate mixing bowl mash the banana. Add in sugar and stir to combine. Next add in peanut butter and stir until the mixture is smooth. Whisk in oil, milk, egg and vanilla essence until the mixture is well combined.
Lastly add the dry ingredients into the wet ingredients and stir until well incorporated not to over mix. Mixture should be thick at this stage.
Divide batter using a spoon and pour into paper liners. Bake in a preheated oven for about 15-20’C until a toothpick inserted comes out clean. Let it cool in a cooling rack.
A delicious, soft and moist muffins perfect for breakfast and an afternoon tea! That makes me happy!
