A Different.. Yummy Pineapple Tarts

If you remember my post on ‘Achar’ recently and the talented cook Julie, you are in for another treat!

These pretty looking pineapple tarts are homemade by her too.

Briefly, this is a shortcrust pastry using basic ingredients like flour, icing sugar, cold butter, egg and vanilla essence.

These cookies are a celebration during festive seasons like the Chinese New Year where pineapples are a symbol of good luck and prosperity.

When baked, the crust of this pineapple tart is usually pale and crumbly but this homemade delicious recipe is different. I am intrigued to find out why ?

I suppose again it s an Eurasian thing where the crust is a bit crunchy outside and crumbly on the inside and yet it melts in the mouth. The pretty color of the crust and pineapple jam already tells how rich the taste would be.

I could taste the mellow flavour of the pineapple jam and the fragrance coming from the buttery crust. Like it is straight from the oven fresh and YUM!

It can be additive too. So I must hide these cookies somewhere or else my other half would finish in no time!
